Alongside their brigades, they have worked closely with <strong>\u00c9l\u00e9onore and Adeline Gu\u00e9rard<\/strong>, who, through multiple tastings, refined every detail of these new creations.<\/p>\n\n\n\n<p>Here, every dish tells a story\u2014a tale of nature\u2019s generosity, crafted into something timeless.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>First signs of spring<\/strong><\/h3>\n\n\n\n<p>The journey begins with a vibrant, essential ode to the land. <strong>The \u201cPride of the Pastures\u201d Asparagus<\/strong> stands tall in its quiet majesty. A single green spear, gently butter-braised, dusted with a crisp potato and truffle crumble. It converses with two accompaniments: a <strong>delicate shallot and truffle sabayon<\/strong>, sharpened with a hint of vinegar, and a <strong>buttered asparagus jus laced with kaffir lime<\/strong>, whispering citrusy elegance. A tribute to the purity of a vegetable that flourishes in the open fields of Gascony.<\/p>\n\n\n\n<p>Then, a call from the sea. The <strong>Golden Langoustine with Spiced Butter<\/strong> awakens the senses with faraway flavors. A dish of contrasts\u2014dark and light, strength and softness, ocean depths and open skies.<\/p>\n\n\n\n<p>Then comes a bolder embrace, heady and unexpected. <strong>Foie Gras Swooned in Barocco &amp; \u201cFlame-Turned\u201d Lobster<\/strong> reveals a rare harmony. The foie gras, poached in a <strong>broth of Barocco wine<\/strong> from Les Pr\u00e9s&#8217; own vineyards, carries the full-bodied fruit of the grape. At its side, lobster, <strong>shaved into near-translucent slices and kissed by fire<\/strong>, brings a fresh yet smoky counterpoint.
