From April 3rd to 6th, the season opens gently: first dips in the water, long lunches, champagne poured quietly in the kitchen, time in the gardens, a few well-kept secrets…

THE ART OF BRIOCHE FEUILLETÉE
[L’Ecole de Cuisine]

Folded, glazed, irresistible… brioche feuilletée sits somewhere between devotion and indulgence.

Over the course of an hour and a half, hands learn what memory keeps: a supple brioche dough, then the delicate rhythm of lamination, where patience meets pleasure.
A quiet mastery… and, later, a certain pride at the table.

Just steps from the stoves, something rather special unfolds.

Chef Hugo Souchet, a discreet connoisseur of remarkable champagnes, invites a handful of guests to share a glass, and a moment. A cuvée from Savart, revealed slowly, alongside four small bites composed for the occasion.

Around you, the quiet choreography of evening service begins.

Easter has its little rituals.
Ours tend to drift… delightfully.

At L’Orangerie, the table is set for a long, generous lunch: seasonal, spirited, and just a touch mischievous. You may find yourself staying longer than intended.

A Visit to Château de Bachen

Seven kilometres from Eugénie, overlooking the Adour valley, the family château reveals itself. Eighteenth-century in spirit, quietly inhabited by artworks and memories, it leads naturally towards the cellars … and a tasting, unhurried.

Sunday Cocktail Atelier

Before you leave, a final gesture.
At 5pm, one of our bartenders shares the secrets of a seasonal cocktail, imagined with Jérémy Lauilhé — Meilleur Ouvrier de France. A passing ritual… worth lingering for.

A Walk Through the Gardens

Follow Laurent, our Head Gardener, along shaded paths and quiet corners: kitchen garden, roses, topiary, hidden enclosures… Forty-five minutes, at the pace of the season.

A Chocolate Interlude at Mère Poule

An object, first.
A curious, almost dreamlike press, imagined by Michel Guérard, crowned in silver, held by two elephants. From it, Quentin Lemmery and his pastry brigade draw something altogether more immediate: chocolate, in generous expressions.

On the terrace, beneath the plane trees, the moment stretches. Coralie welcomes you, simply, warmly.
