From March 18 to 29, 2026, the initiative Asperges en Fête, celebrated across the Landes region, honours this emblematic product. Restaurants, producers and artisans come together to showcase the white and green asparagus of the Landes, harvested at full maturity from the region’s light sandy soils. At Eugénie, asparagus has always held a special place. With the first arrivals of the season, it appears on the tables of the house, simply roasted in the fireplace, served warm with a delicate jus, or paired with a few carefully chosen seasonal ingredients. At L’Orangerie, our cooking is guided by the seasons. Generous yet precise, ingredients are treated with simplicity, often over the fireplace, to reveal their full flavour.
