Michel Guérard and Hugo Souchet exalt the great French tradition, combining History, Nature and the thrilling Adventure of culinary creation. The gourmet restaurant has been shining with 3 Michelin stars for over 45 years !
Roasted Lobster, lightly smoked in the hearth, diaphanous pillow of Morels and wild mushrooms with asparagus tips, glazed foie gras on the embers, “light as a cloud” Marquis de Béchamel frothy cake … These are all pleasant temptations to enjoy a naturalistic cuisine, cooked over the flames of our fireplace.
A score deliciously orchestrated by Michel, Eléonore and Adeline Guérard, Hugo Souchet and the Eugénie Brigade:
Before booking a table at the Restaurant Michel Guérard, a 3-star Michelin restaurant at Les Prés d’Eugénie in Eugénie-les-Bains (Landes), find the answers to the most frequently asked questions: Michelin stars, the chef in the kitchen, menus, specialties, opening hours, and reservation details.
The Restaurant Michel Guérard has held three Michelin stars continuously since 1977. It also boasts 4 Toques in the Gault & Millau guide and is a member of Les Grandes Tables du Monde. The restaurant is one of two Michelin-starred dining experiences at the 5-star Relais & Châteaux Palace Les Prés d’Eugénie, the other being L’Orangerie (1 Michelin star since 2025).
In the kitchen, following the inspired legacy of Michel Guérard, Chef Hugo Souchet and the Eugénie culinary team now orchestrate the cuisine. Christine and Michel Guérard, who founded the restaurant and Les Prés d’Eugénie in 1974, have passed the artistic direction of the House down to their daughters, Adeline and Éléonore Guérard.
The cuisine at the Restaurant Michel Guérard is described as “naturalistic”: it marries grand French tradition, natural elements, poetry, and creativity. Among the signature dishes featured on our website are the Young Pigeon from Vielle-Tursan “en Bécasse,” the “Tourne-Feu” Lobster, the diaphanous Dim Sum “under the foam,” the “Queen of the Landes” Asparagus, the embers-glazed Foie Gras, and the “Cloud” Entremets of the Marquis de Béchamel. This is a cuisine born over fireplace embers, celebrating the beauty of the Aquitaine and French terroirs. Michel Guérard is also the creator of the pioneering Grande Cuisine Minceur gastronomic concept in 1975.
Three menus are available: the Palais Enchanté menu (the signature full tasting experience in 9 courses), the Jour de Fête menu (in 7 courses), and the Retour des Champs menu (in 4 courses). Each menu unfolds as a meticulously orchestrated journey of taste, served in the Empress’s Historic Salons—a true “living museum” of the property. While ties and tailored jackets are not mandatory, we greatly appreciate our guests’ sartorial efforts. A “casual chic” attire is considered the minimum standard.
Laetitia Andrews, our Head Sommelier, and her team curate a finely selected pairing for each seasonal menu, putting the spotlight on exceptional regional and French wines. The number of glasses served corresponds to the number of courses on the menu. Our cellar also offers non-alcoholic beverages and a dedicated dish & no-alcohol pairing.
Our menus are designed as complete culinary journeys, from the amuse-bouche to the final sweet delicacies (both of which are served in addition to the stated number of courses). The 4-course Retour des Champs menu can be enjoyed in under 2 hours. For the 7-course Jour de Fête menu, please allow 2.5 hours, and 3 hours for the Palais Enchanté menu. For each menu, the dishes and their quantities have been carefully portioned to ensure most appetites are perfectly satisfied without feeling overwhelmed.
